Founded 180 over years ago, Isshi Souden Nakamura is a prominent old Japanese restaurant that has retained a Michelin 3-star rating consecutively since 2011, its name is known world-wide as it represents Kyoto and its cuisine. Head chef and owner Motokazu Nakamura is the 6th generation of the Nakamura family; initiated in the family's secret flavor that has been handed down from father to son for generations. The first generation of Nakamura saw the closing years of the Edo period, where the Nakamura family served Kyoto's nobility and feudal lords.

While protecting its traditional tastes and seasonal flavors, Isshi Souden Nakamura also has a foundation that is grounded on a scientific study of food.
